Create the crema: Pour in 1 to 2 oz of hot water and whisk vigorously in a zig-zag motion until a layer of fine, emerald microfoam forms on the surface.
Craft the banana cold foam: In a separate bowl or blender, combine whipping cream or chilled coconut milk with banana purée, a dash of vanilla extract, and a drizzle of maple syrup. Whip or froth until light, airy, and slightly thickened. Tip: For extra stability, use a handheld milk frother.
Assemble with care: Gently spoon or pour the banana cold foam over your prepared matcha. Top with a thin slice of fresh banana or a dusting of matcha powder, if desired.
